Antioxidanten in de verschillende groenten zouden volgens de onderzoekers beter behouden blijven in de gebakken versies. In bepaalde gevallen zagen ze dat de voedingswaarde door verhitting in extra vierge olijfolie zelfs was toegenomen.<\/p>\n<p><strong>Effecten van bereiding op vitaminebehoud<\/strong><br \/>\nDe bereidingswijze heeft invloed op het aantal voedingsstoffen dat het lichaam eruit opneemt. Bij bakken en braden in een koekenpan wordt het product zelf meestal niet meer dan 100\u00b0C. Doordat er geen water betrokken is bij de bereiding lekken er geen vitamines weg.<\/p>\n<p><strong>Voor- en nadelen bakken<\/strong><br \/>\nDat voordeel is relatief, aangezien in Nederland geen volksgezondheidsproblemen bekend zijn die gerelateerd zijn aan vitaminetekorten. Als je groenten bakt, nemen ze olie of vet op. Gezonde vetten heb je nodig, maar vetten leveren tegelijkertijd relatief veel calorie\u00ebn. Het is het aannemelijk dat mensen die gebakken groenten eten daarmee meer calorie\u00ebn binnen krijgen. Plantaardige oli\u00ebn of vloeibaar bak- en braadvet zijn een goede keuze als je wilt bakken. <strong>Overigens raadt het Voedingscentrum af om in extra vierge olijfolie te bakken,<\/strong> omdat bij verhitting daarvan ongezonde stoffen ontstaan.<\/p>\n<p><strong>Gezonde bereidingstechnieken<\/strong><br \/>\nAndere bereidingstechnieken waarmee je kunt afwisselen zijn koken in weinig water, stomen en bereiden in de oven.
